  • 4 large egg yolks

  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch (optional, for thicker custard)

Instructions

  1. Preheat your oven to 325°F. Prepare a baking dish by placing it on the middle rack and filling it with hot water to create a water bath for the custard cups.
  2. In a medium saucepan, combine the almond milk, heavy cream, and erythritol. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.
  3. In a separate bowl, whisk together the egg yolks, black sesame paste, vanilla extract, and salt until well combined.
  4. Slowly pour the warm milk mixture into the egg yolk mixture, whisking continuously to temper the eggs and prevent them from scrambling.
  5. If using cornstarch, dissolve it in a small amount of cold water and add it to the mixture, whisking until smooth.
