Ingredients

  • 1/4 cup cocoa powder
  • 1/2 cup erythritol
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • Black food coloring (optional)
  • Sugar-free frosting (for decoration)
  • Chocolate chips (for eyes)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. In another bowl, whisk together eggs, almond milk, melted coconut oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until well combined. Add black food coloring if desired.
  5. Pour the batter into the cupcake liners, filling them about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Let the cupcakes cool completely before decorating with sugar-free frosting.
  8. Use chocolate chips to create eyes on the cupcakes.
