Keto Biscuit Sandwiches with Egg & Cheese are irresistible!
Ingredients

- 2 cups almond flour
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup shredded cheddar cheese
- 4 large eggs (for filling)
- Salt and pepper to taste
- Cooking spray or oil for frying
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, baking powder, garlic powder, onion powder, and salt. Mix well.
- In a separate bowl, whisk together the melted butter and 2 eggs until well combined. Add the wet ingredients to the dry ingredients and stir until a dough forms. Fold in the shredded cheddar cheese.
- Scoop the dough onto the prepared baking sheet, forming 8 equal-sized biscuits. Flatten each biscuit slightly with your hand.
- Bake in the preheated oven for 15-20 minutes, or until golden brown. Remove from the oven and let cool slightly.
- While the biscuits are baking, heat a skillet over medium heat and spray with cooking spray or a little oil. Crack the 4 eggs into the skillet and cook to your liking (sunny-side up, over-easy, etc.). Season with salt and pepper.
- Once the biscuits are cool enough to handle, slice them in half horizontally. Place a cooked egg on the bottom half of each biscuit, then top with the other half.
- Serve warm and enjoy your delicious keto biscuit sandwiches!
Notes
- For a spicier kick, add a slice of cooked bacon or a dash of hot sauce to your sandwich.
- You can also substitute the cheddar cheese with pepper jack for added flavor.
- If you prefer a vegetarian option, replace the egg with avocado slices and add fresh spinach.
