Keto Biscuit Sandwiches with Egg & Cheese are irresistible!


Ingredients

Scale
  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 4 large eggs (for filling)
  • Salt and pepper to taste
  • Cooking spray or oil for frying

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, baking powder, garlic powder, onion powder, and salt. Mix well.
  3. In a separate bowl, whisk together the melted butter and 2 eggs until well combined. Add the wet ingredients to the dry ingredients and stir until a dough forms. Fold in the shredded cheddar cheese.
  4. Scoop the dough onto the prepared baking sheet, forming 8 equal-sized biscuits. Flatten each biscuit slightly with your hand.
  5. Bake in the preheated oven for 15-20 minutes, or until golden brown. Remove from the oven and let cool slightly.
  6. While the biscuits are baking, heat a skillet over medium heat and spray with cooking spray or a little oil. Crack the 4 eggs into the skillet and cook to your liking (sunny-side up, over-easy, etc.). Season with salt and pepper.
  7. Once the biscuits are cool enough to handle, slice them in half horizontally. Place a cooked egg on the bottom half of each biscuit, then top with the other half.
  8. Serve warm and enjoy your delicious keto biscuit sandwiches!

Notes

  • For a spicier kick, add a slice of cooked bacon or a dash of hot sauce to your sandwich.
