- 1 pound beef tenderloin, thinly sliced
- 2 tablespoons avocado oil
- 1 large shallot, finely chopped
- 3 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 1 cup beef stock
- 1 tablespoon soy sauce
- 1 teaspoon whole grain mustard
- 1 cup coconut cream
- Salt and pepper to taste
- 1 package (7 ounces) Shirataki noodles, rinsed and drained
- Chopped chives (for garnish)
Instructions
- In a large skillet, heat avocado oil over medium-high heat. Add the beef slices and sear until they develop a nice brown crust, approximately 3-4 minutes. Remove the beef from the skillet and place it aside.
- In the same skillet, toss in the chopped shallot and sauté until softened, around 3 minutes. Stir in the minced garlic and sliced cremini mushrooms, cooking until the mushrooms are golden and tender, about 5 minutes.
- Add the beef stock, soy sauce, and whole grain mustard to the skillet. Mix thoroughly and let it simmer for about 5 minutes to allow the flavors to meld and the liquid to reduce slightly.
- Reduce the heat and pour in the coconut cream, stirring to combine. Return the seared beef to the skillet and season with salt and pepper. Let it simmer gently for another 3-4 minutes until everything is heated through and the sauce thickens to your liking.
- While the stroganoff is simmering, prepare the Shirataki noodles according to the package directions. Rinse and drain them well.
- Plate the beef stroganoff over the Shirataki noodles and finish with a sprinkle of chopped chives for a fresh touch.
