- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth (low sodium)
- 1 cup carrots, sliced (optional for strict keto)
- 1 cup celery, diced
- 1 cup mushrooms, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 bay leaf
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Return the browned beef to the pot. Add the beef broth, Worcestershire sauce, apple cider vinegar, thyme, rosemary, paprika, and bay leaf. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- If using, add the carrots, celery, and mushrooms during the last 30 minutes of cooking. Adjust seasoning with salt and pepper as needed.
- Remove the bay leaf before serving. Garnish with fresh parsley.
Notes
- For a thicker stew, you can blend a portion of the stew and stir it back in.
- Add other low-carb vegetables like zucchini or bell peppers for extra flavor and nutrition.
- Serve with pork rinds, celery sticks, or cucumber slices for a crunchy side.
