Description

A delicious and hearty Keto Beef Stew that is low in carbs and perfect for a satisfying meal.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth (low sodium)
  • 1 cup carrots, sliced (optional for strict keto)
  • 1 cup celery, diced
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Return the browned beef to the pot. Add the beef broth, Worcestershire sauce, apple cider vinegar, thyme, rosemary, paprika, and bay leaf. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  5. If using, add the carrots, celery, and mushrooms during the last 30 minutes of cooking. Adjust seasoning with salt and pepper as needed.
  6. Remove the bay leaf before serving. Garnish with fresh parsley.

Notes

  • For a thicker stew, you can blend a portion of the stew and stir it back in.
  • Add other low-carb vegetables like zucchini or bell peppers for extra flavor and nutrition.
  • Serve with pork rinds, celery sticks, or cucumber slices for a crunchy side.
