Ingredients

  • 1 pound ground beef (80/20 blend)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon turmeric powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (or to taste)
  • Salt and pepper to taste
  • 1 large head of romaine lettuce, leaves separated
  • 1 cup chopped tomatoes
  • 1 cup chopped cucumber
  • 1/2 cup thinly sliced red onion
  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh lemon juice
  • Chopped fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned and crumbly, about 5-7 minutes.
  3. Incorporate the cumin, smoked paprika, turmeric, garlic powder, onion powder, coriander, cayenne pepper, salt, and pepper. Sauté for another 2-3 minutes.
  4. In a small bowl, combine the Greek yogurt and lemon juice to prepare the yogurt sauce. Add a pinch of salt.
  5. Take a romaine leaf and fill it with a scoop of the seasoned beef.
  6. Layer on the diced tomatoes, cucumber, and red onion, then drizzle with the yogurt sauce.
  7. Sprinkle with chopped parsley and enjoy your wraps immediately!
