Ingredients

  • 1 pound ground beef (80/20 blend)
  • 1/2 pound ground pork
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs
  • 8 slices of bacon
  • 1/2 cup sugar-free ketchup (for topping)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, ground pork, almond flour, Parmesan cheese, chopped onion, minced garlic, eggs, Worcestershire sauce, salt, pepper, and Italian herbs. Mix until well combined.
  3. Shape the meat mixture into a loaf and place it in a baking dish lined with parchment paper.
  4. Wrap the bacon slices around the meatloaf, tucking the ends underneath.
  5. Spread the sugar-free ketchup evenly over the top of the meatloaf.
  6. Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 160°F.
  7. Let it rest for 10 minutes before slicing.

Notes

  • For added flavor, mix in chopped bell peppers or mushrooms into the meat mixture.
  • If you prefer a spicier kick, add a teaspoon of hot sauce or red pepper flakes to the meat mixture.
