- 1 pound ground beef (80/20 blend)
- 1/2 pound ground pork
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs
- 8 slices of bacon
- 1/2 cup sugar-free ketchup (for topping)
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the ground beef, ground pork, almond flour, Parmesan cheese, chopped onion, minced garlic, eggs, Worcestershire sauce, salt, pepper, and Italian herbs. Mix until well combined.
- Shape the meat mixture into a loaf and place it in a baking dish lined with parchment paper.
- Wrap the bacon slices around the meatloaf, tucking the ends underneath.
- Spread the sugar-free ketchup evenly over the top of the meatloaf.
- Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 160°F.
- Let it rest for 10 minutes before slicing.
Notes
- For added flavor, mix in chopped bell peppers or mushrooms into the meat mixture.
- If you prefer a spicier kick, add a teaspoon of hot sauce or red pepper flakes to the meat mixture.
