A delicious and healthy Keto Baba Ghanoush served with savory olive crackers, perfect for a low-carb snack.


Ingredients

  • 2 medium eggplants (approximately 1 pound total)
  • 3 tablespoons tahini
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, finely minced
  • 1 teaspoon ground cumin
  • Salt and freshly ground pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped pitted black olives
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. Poke holes in the eggplants with a fork and arrange them on a baking sheet.
  3. Roast the eggplants for 30-40 minutes, flipping halfway through, until the skin is charred and the insides are tender.
  4. Allow the roasted eggplants to cool slightly, then scoop the soft flesh into a mixing bowl.
  5. Add tahini, olive oil, lemon juice, minced garlic, ground cumin, and a sprinkle of salt and pepper to the eggplant in the bowl.
  6. Blend the mixture until smooth and creamy, adjusting seasoning as needed.
  7. Lower the oven temperature to 350°F for the olive crisps.
  8. In a separate bowl, mix almond flour, Parmesan cheese, chopped olives, egg, garlic powder, onion powder, salt, and black pepper until a cohesive dough forms.
  9. Roll out the dough between two sheets of parchment paper to about 1/8 inch thick.
  10. Cut into preferred shapes and transfer to a parchment-lined baking sheet.
  11. Bake the crisps for 12-15 minutes, or until golden brown.
  12. Allow the crisps to cool completely on the baking sheet.
  13. Plate the eggplant delight, drizzle with olive oil, garnish with fresh parsley, and serve with the savory olive crisps.
