A delicious and healthy Keto Avocado and Egg Gratin recipe that combines creamy avocados with eggs and cheese.

- 2 ripe avocados
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F.
- Cut the avocados in half, remove the pits, and scoop out a little extra flesh to create a larger cavity for the egg.
- Place the avocado halves in a baking dish, cut side up.
- Drizzle with olive oil and season with salt, pepper, garlic powder, and onion powder.
- Carefully crack an egg into each avocado half.
- Sprinkle the shredded cheddar cheese evenly over the top of each egg.
- Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still runny (or to your desired doneness).
- Remove from the oven and let cool for a few minutes.
- Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper or some diced jalapeños before baking.
- You can substitute the cheddar cheese with feta or goat cheese for a different flavor profile.
