Description

Keto Almond Cookies are a delicious low-carb treat perfect for those following a ketogenic diet.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated erythritol or your preferred keto sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and erythritol until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  4. In another bowl, whisk together the almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each ball slightly with the palm of your hand or the bottom of a glass.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chocolate twist, add 1/4 cup of sugar-free chocolate chips to the dough before baking.
  • For a nutty flavor, substitute half of the almond flour with finely ground pecans or walnuts.
