- 1 cup almond flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated erythritol or your preferred keto sweetener
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and erythritol until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- In another bowl, whisk together the almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with the palm of your hand or the bottom of a glass.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chocolate twist, add 1/4 cup of sugar-free chocolate chips to the dough before baking.
- For a nutty flavor, substitute half of the almond flour with finely ground pecans or walnuts.
