- 1 ½ cups almond flour
- ½ cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup erythritol or preferred keto sweetener
- ½ cup unsalted butter, softened
- 1 large egg

- 1 cup unsweetened shredded coconut (for filling)

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, cocoa powder, baking powder, and salt.
- In another bowl, beat together the erythritol and softened butter until creamy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Scoop out tablespoon-sized portions of dough and roll them into balls.
- Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with your hand or the bottom of a glass.
- Bake for 10-12 minutes or until the edges are firm.
- Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
- While the cookies are cooling, prepare the coconut filling by mixing together shredded coconut, erythritol, melted coconut oil, and vanilla extract until well combined.
- Once the cookies are completely cooled, spread a generous amount of the coconut filling on the flat side of one cookie and sandwich it with another cookie.
- Repeat until all cookies are filled.
- Dust the filled alfajores with unsweetened cocoa powder before serving.
Notes
- Chill the filled cookies in the refrigerator for about 30 minutes before serving to help the filling set.
- You can substitute the shredded coconut with finely chopped nuts for a different flavor.
- For a chocolatey twist, dip the filled cookies in melted sugar-free chocolate instead of dusting with cocoa powder.
