Description

Delicious Keto Alfajor Cookies filled with a creamy coconut filling, perfect for a low-carb treat.


Ingredients

  • 1 ½ cups almond flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup erythritol or preferred keto sweetener
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened shredded coconut (for filling)
  • ¼ cup erythritol or preferred keto sweetener (for filling)
  • 2 tablespoons coconut oil, melted (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • ½ cup unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat together the erythritol and softened butter until creamy.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Scoop out tablespoon-sized portions of dough and roll them into balls.
  7. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Flatten each ball slightly with your hand or the bottom of a glass.
  9. Bake for 10-12 minutes or until the edges are firm.
  10. Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
  11. While the cookies are cooling, prepare the coconut filling by mixing together shredded coconut, erythritol, melted coconut oil, and vanilla extract until well combined.
  12. Once the cookies are completely cooled, spread a generous amount of the coconut filling on the flat side of one cookie and sandwich it with another cookie.
  13. Repeat until all cookies are filled.
  14. Dust the filled alfajores with unsweetened cocoa powder before serving.

Notes

  • Chill the filled cookies in the refrigerator for about 30 minutes before serving to help the filling set.
  • You can substitute the shredded coconut with finely chopped nuts for a different flavor.
  • For a chocolatey twist, dip the filled cookies in melted sugar-free chocolate instead of dusting with cocoa powder.
