Description

A delicious and healthy Japanese dish featuring miso-glazed salmon served on a bed of shirataki noodles.


Ingredients

  • 4 salmon fillets (6 ounces each)
  • 1/4 cup white miso paste
  • 2 tablespoons maple syrup
  • 2 tablespoons tamari sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon freshly grated ginger
  • 1 package (8 ounces) shirataki noodles, rinsed and drained
  • 1 tablespoon olive oil
  • 2 green onions, finely chopped for topping
  • Toasted sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the miso paste, maple syrup, tamari sauce, rice wine vinegar, toasted sesame oil, and grated ginger, stirring until smooth.
  3. Arrange the salmon fillets on a lined baking tray and coat each piece generously with the miso mixture.
  4. Bake for about 12-15 minutes, or until the salmon is tender and flakes easily with a fork.
  5. While the salmon is baking, warm the olive oil in a skillet over medium heat.
  6. Add the rinsed shirataki noodles and sauté for approximately 3-4 minutes until warmed through.
  7. Once the salmon is done, allow it to rest for a couple of minutes before plating.
  8. Serve the salmon atop a nest of shirataki noodles, and finish with a sprinkle of chopped green onions and toasted sesame seeds.

Notes

  • Ensure the shirataki noodles are well rinsed to remove any odor.
  • Adjust the sweetness of the glaze by adding more or less maple syrup according to your taste.
