Ingredients

  • 2 pounds pork belly, skin on
  • 2 tablespoons Jamaican jerk seasoning
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 lime, juiced

Instructions

  1. Preheat your oven to 300°F.
  2. Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
  3. In a small bowl, mix the jerk seasoning, brown sugar, salt, black pepper, garlic powder, onion powder, and smoked paprika.
  4. Rub the olive oil all over the pork belly, then generously apply the spice mixture.
  5. Place the pork belly on a rack in a roasting pan, skin side up, and pour lime juice over the top.
  6. Roast in the preheated oven for about 2.5 to 3 hours, or until the meat is tender and the skin is crispy.
  7. For extra crispy skin, increase the oven temperature to 450°F for the last 15-20 minutes of cooking.
  8. Once done, remove from the oven and let it rest for 10-15 minutes before slicing.

Notes

  • For a spicier kick, add chopped Scotch bonnet peppers to the spice mix.
  • If you prefer a sweeter flavor, drizzle some honey over the pork belly during the last 30 minutes of roasting.
