- 2 pounds pork belly, skin on
- 2 tablespoons Jamaican jerk seasoning
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 1 lime, juiced
Instructions
- Preheat your oven to 300°F.
- Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
- In a small bowl, mix the jerk seasoning, brown sugar, salt, black pepper, garlic powder, onion powder, and smoked paprika.
- Rub the olive oil all over the pork belly, then generously apply the spice mixture.
- Place the pork belly on a rack in a roasting pan, skin side up, and pour lime juice over the top.
- Roast in the preheated oven for about 2.5 to 3 hours, or until the meat is tender and the skin is crispy.
- For extra crispy skin, increase the oven temperature to 450°F for the last 15-20 minutes of cooking.
- Once done, remove from the oven and let it rest for 10-15 minutes before slicing.
Notes
- For a spicier kick, add chopped Scotch bonnet peppers to the spice mix.
- If you prefer a sweeter flavor, drizzle some honey over the pork belly during the last 30 minutes of roasting.
