Delicious low carb and keto-friendly stuffed meatballs made in the Instant Pot.

- 1 pound ground beef (80/20)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup marinara sauce (sugar-free for low carb)
- 1/4 cup fresh basil, chopped (optional for garnish)
Instructions
- In a large bowl, combine ground beef, ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until well combined.
- Preheat the Instant Pot by selecting the ‘SautĂ©’ function. Once hot, add a tablespoon of olive oil if desired.
- Take a small amount of the meat mixture (about 2 tablespoons) and flatten it in your hand.
- Place a small spoonful of marinara sauce in the center, then fold the meat around the sauce to form a ball.
- Repeat with the remaining mixture to create about 10-12 meatballs.
- Once the meatballs are formed, pour the remaining marinara sauce into the Instant Pot.
- Carefully place the meatballs on top of the sauce.
- Close the lid of the Instant Pot, ensuring the valve is set to ‘Sealing.’
- Select the ‘Manual’ or ‘Pressure Cook’ function and set the timer for 10 minutes.
- When the cooking time is complete, allow the Instant Pot to naturally release pressure for 5 minutes, then carefully switch the valve to ‘Venting’ to release any remaining pressure.
- Open the lid and check that the meatballs are cooked through.
- Serve hot, garnished with fresh basil if desired.
Notes
- For best flavor, let the meatballs rest in the sauce for a few minutes before serving.
- You can substitute ground turkey or chicken for a leaner option.
- For added flavor, mix in chopped spinach or herbs into the meat mixture.
