Description

Delicious low carb and keto-friendly stuffed meatballs made in the Instant Pot.


Ingredients

  • 1 pound ground beef (80/20)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce (sugar-free for low carb)
  • 1/4 cup fresh basil, chopped (optional for garnish)

Instructions

  1. In a large bowl, combine ground beef, ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until well combined.
  2. Preheat the Instant Pot by selecting the ‘SautĂ©’ function. Once hot, add a tablespoon of olive oil if desired.
  3. Take a small amount of the meat mixture (about 2 tablespoons) and flatten it in your hand.
  4. Place a small spoonful of marinara sauce in the center, then fold the meat around the sauce to form a ball.
  5. Repeat with the remaining mixture to create about 10-12 meatballs.
  6. Once the meatballs are formed, pour the remaining marinara sauce into the Instant Pot.
  7. Carefully place the meatballs on top of the sauce.
  8. Close the lid of the Instant Pot, ensuring the valve is set to ‘Sealing.’
  9. Select the ‘Manual’ or ‘Pressure Cook’ function and set the timer for 10 minutes.
  10. When the cooking time is complete, allow the Instant Pot to naturally release pressure for 5 minutes, then carefully switch the valve to ‘Venting’ to release any remaining pressure.
  11. Open the lid and check that the meatballs are cooked through.
  12. Serve hot, garnished with fresh basil if desired.

Notes

  • For best flavor, let the meatballs rest in the sauce for a few minutes before serving.
  • You can substitute ground turkey or chicken for a leaner option.
  • For added flavor, mix in chopped spinach or herbs into the meat mixture.
