Delicious and easy-to-make Holiday Keto Almond Joy Bars that satisfy your sweet cravings while keeping you in ketosis.

- 2 cups unsweetened shredded coconut
- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup powdered erythritol (or preferred keto sweetener)
- 1/2 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup whole almonds
- 1/2 cup sugar-free dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine the shredded coconut, almond flour, cocoa powder, powdered erythritol, melted coconut oil, vanilla extract, and salt. Mix until well combined and a dough-like consistency forms.
- Press half of the coconut mixture evenly into the bottom of the prepared baking dish to form the base layer.
- Place whole almonds on top of the base layer, spacing them evenly.
- Spread the remaining coconut mixture over the almonds, pressing down gently to ensure it adheres.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. Remove from the oven and allow to cool completely in the pan.
- Once cooled, melt the sugar-free dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Pour the melted chocolate over the cooled bars, spreading it evenly. Refrigerate for at least 30 minutes to set the chocolate.
- Once set, lift the bars out of the pan using the parchment paper overhang and cut into squares or rectangles.
Notes
- For added flavor, consider mixing in a teaspoon of almond extract to the coconut mixture.
- Substitute the almonds with chopped pecans or walnuts for a different nutty flavor.
