Description

Delicious and easy-to-make Holiday Keto Almond Joy Bars that satisfy your sweet cravings while keeping you in ketosis.


Ingredients

  • 2 cups unsweetened shredded coconut
  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup powdered erythritol (or preferred keto sweetener)
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup whole almonds
  • 1/2 cup sugar-free dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine the shredded coconut, almond flour, cocoa powder, powdered erythritol, melted coconut oil, vanilla extract, and salt. Mix until well combined and a dough-like consistency forms.
  3. Press half of the coconut mixture evenly into the bottom of the prepared baking dish to form the base layer.
  4. Place whole almonds on top of the base layer, spacing them evenly.
  5. Spread the remaining coconut mixture over the almonds, pressing down gently to ensure it adheres.
  6. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. Remove from the oven and allow to cool completely in the pan.
  7. Once cooled, melt the sugar-free dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  8. Pour the melted chocolate over the cooled bars, spreading it evenly. Refrigerate for at least 30 minutes to set the chocolate.
  9. Once set, lift the bars out of the pan using the parchment paper overhang and cut into squares or rectangles.

Notes

  • For added flavor, consider mixing in a teaspoon of almond extract to the coconut mixture.
