Description

A delicious recipe for grilled sardines enhanced with garlic and herb butter, perfect for seafood lovers.

Ingredients

Scale
  • 1 pound fresh sardines, cleaned and scaled
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn until they are covered with white ash.
  2. In a small bowl, combine the softened butter, minced garlic, chopped parsley, lemon juice, lemon zest, salt, and pepper. Mix until well combined.
  3. Pat the sardines dry with paper towels and season them lightly with salt and pepper, both inside and out.
  4. Using a brush or a knife, spread a generous amount of the garlic and herb butter inside the cavity of each sardine and on the outside.
  5. Place the sardines directly on the grill grates. Grill for about 3-4 minutes on each side, or until the skin is crispy and the fish is cooked through.
  6. Remove the sardines from the grill and brush with any remaining garlic and herb butter.
  7. Serve immediately with lemon wedges on the side for squeezing over the fish.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the garlic and herb butter.
  • If fresh sardines are not available, you can substitute with canned sardines; just skip the grilling step and serve them with the garlic herb butter on top.
