A delicious recipe for grilled sardines enhanced with garlic and herb butter, perfect for seafood lovers.

- 1 pound fresh sardines, cleaned and scaled
- 4 tablespoons unsalted butter, softened
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
- Lemon wedges, for serving
Instructions
- Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn until they are covered with white ash.
- In a small bowl, combine the softened butter, minced garlic, chopped parsley, lemon juice, lemon zest, salt, and pepper. Mix until well combined.
- Pat the sardines dry with paper towels and season them lightly with salt and pepper, both inside and out.
- Using a brush or a knife, spread a generous amount of the garlic and herb butter inside the cavity of each sardine and on the outside.
- Place the sardines directly on the grill grates. Grill for about 3-4 minutes on each side, or until the skin is crispy and the fish is cooked through.
- Remove the sardines from the grill and brush with any remaining garlic and herb butter.
- Serve immediately with lemon wedges on the side for squeezing over the fish.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the garlic and herb butter.
- If fresh sardines are not available, you can substitute with canned sardines; just skip the grilling step and serve them with the garlic herb butter on top.
