Description

A delicious recipe for grilled salmon topped with a flavorful chimichurri butter.


Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter, softened

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, combine the parsley, cilantro, garlic, red pepper flakes, 1/4 cup olive oil, red wine vinegar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well and set aside.
  3. Pat the salmon fillets dry with paper towels. Brush both sides with 1 tablespoon of olive oil and season with salt and pepper.
  4. Place the salmon fillets skin-side down on the grill. Cook for about 6-8 minutes, then carefully flip and grill for an additional 4-6 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. While the salmon is grilling, in a separate bowl, mix the softened butter with half of the chimichurri sauce until well combined.
  6. Once the salmon is done, remove it from the grill and let it rest for a couple of minutes. Serve the salmon topped with the chimichurri butter and the remaining chimichurri sauce on the side.

Notes

  • For added flavor, try marinating the salmon in a bit of the chimichurri sauce for 30 minutes before grilling.
  • You can also substitute the salmon with other firm fish like swordfish or tuna for a different taste.
