Description
A delicious recipe for grilled salmon topped with a flavorful chimichurri butter.

- 2 (6-ounce) salmon fillets
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons unsalted butter, softened
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, combine the parsley, cilantro, garlic, red pepper flakes, 1/4 cup olive oil, red wine vinegar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well and set aside.
- Pat the salmon fillets dry with paper towels. Brush both sides with 1 tablespoon of olive oil and season with salt and pepper.
- Place the salmon fillets skin-side down on the grill. Cook for about 6-8 minutes, then carefully flip and grill for an additional 4-6 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is grilling, in a separate bowl, mix the softened butter with half of the chimichurri sauce until well combined.
- Once the salmon is done, remove it from the grill and let it rest for a couple of minutes. Serve the salmon topped with the chimichurri butter and the remaining chimichurri sauce on the side.
Notes
- For added flavor, try marinating the salmon in a bit of the chimichurri sauce for 30 minutes before grilling.
- You can also substitute the salmon with other firm fish like swordfish or tuna for a different taste.
