Ingredients

  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and halved
  • ½ cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, oregano, garlic powder, onion powder, salt, and black pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the olive oil mixture evenly over the fillets.
  4. Squeeze the lemon juice over the salmon fillets.
  5. Scatter the cherry tomatoes, cucumber, red onion, and Kalamata olives around the salmon on the baking sheet.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Remove from the oven and sprinkle crumbled feta cheese over the top of the salmon and vegetables.
  8. Garnish with chopped fresh parsley before serving.

Notes

  • For added flavor, marinate the salmon in the olive oil mixture for 30 minutes before baking.
  • Substitute the salmon with chicken breasts or shrimp for a different protein option. Adjust cooking times accordingly.
