- 4 salmon fillets (6 ounces each)
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- Juice of 1 lemon
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red onion, thinly sliced
- ½ cup Kalamata olives, pitted and halved
- ½ cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, oregano, garlic powder, onion powder, salt, and black pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the olive oil mixture evenly over the fillets.
- Squeeze the lemon juice over the salmon fillets.
- Scatter the cherry tomatoes, cucumber, red onion, and Kalamata olives around the salmon on the baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from the oven and sprinkle crumbled feta cheese over the top of the salmon and vegetables.
- Garnish with chopped fresh parsley before serving.
Notes
- For added flavor, marinate the salmon in the olive oil mixture for 30 minutes before baking.
- Substitute the salmon with chicken breasts or shrimp for a different protein option. Adjust cooking times accordingly.
