  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your grill or a grill pan over medium-high heat.
  2. In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and black pepper.
  3. Place the mahi mahi fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for 15-30 minutes.
  4. Lightly oil the grill grates or grill pan. Once hot, add the marinated mahi mahi fillets.
  5. Grill the fillets for about 4-5 minutes on each side, or until they are cooked through and easily flake with a fork.
