- 4 (6-ounce) mahi mahi fillets
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your grill or a grill pan over medium-high heat.
- In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and black pepper.
- Place the mahi mahi fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for 15-30 minutes.
- Lightly oil the grill grates or grill pan. Once hot, add the marinated mahi mahi fillets.
- Grill the fillets for about 4-5 minutes on each side, or until they are cooked through and easily flake with a fork.
- Remove the fillets from the grill and let them rest for a couple of minutes.
- Serve the mahi mahi garnished with fresh parsley and lemon wedges on the side.
