Description

A deliciously healthy snack made with cauliflower, cheese, and herbs.


Ingredients

  • 1 medium head of cauliflower, cut into florets
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. In a food processor, pulse the cauliflower florets until they resemble rice or fine crumbs.
  4. Transfer the cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a large bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, eggs, minced garlic, oregano, basil, salt, black pepper, and red pepper flakes (if using). Mix until well combined.
  6. Spread the cauliflower mixture onto the prepared baking sheet in a rectangular shape, about 1/2 inch thick.
  7. Bake for 25-30 minutes, or until golden brown and firm.
  8. Remove from the oven and let cool for a few minutes.
  9. Cut into slices and serve warm, garnished with fresh parsley.

Notes

  • For a cheesy variation, add 1/4 cup of cream cheese to the mixture before baking.
  • For a spicy kick, top the toast with sliced jalapeños before baking.
