A deliciously healthy snack made with cauliflower, cheese, and herbs.
Ingredients

- 1 medium head of cauliflower, cut into florets
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 2 teaspoons minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper.
- In a food processor, pulse the cauliflower florets until they resemble rice or fine crumbs.
- Transfer the cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, eggs, minced garlic, oregano, basil, salt, black pepper, and red pepper flakes (if using). Mix until well combined.
- Spread the cauliflower mixture onto the prepared baking sheet in a rectangular shape, about 1/2 inch thick.
- Bake for 25-30 minutes, or until golden brown and firm.
- Remove from the oven and let cool for a few minutes.
- Cut into slices and serve warm, garnished with fresh parsley.
Notes
- For a cheesy variation, add 1/4 cup of cream cheese to the mixture before baking.
- For a spicy kick, top the toast with sliced jalapeños before baking.
