- 4 large eggs
- 1/4 cup milk
- 1/2 cup fresh spinach, chopped
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
- Heat a non-stick skillet over medium heat and add the butter, allowing it to melt and coat the bottom of the pan.
- Add the chopped spinach to the skillet and sauté for about 1-2 minutes until wilted.
- Pour the egg mixture into the skillet over the spinach. Let it cook undisturbed for about 2-3 minutes, or until the edges begin to set.
- Gently lift the edges of the omelet with a spatula, allowing any uncooked egg to flow to the edges.
- Once the top is mostly set but still slightly runny, sprinkle the shredded cheese evenly over one half of the omelet.
- Carefully fold the other half of the omelet over the cheese and cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through.
- Slide the omelet onto a plate and serve immediately.

- For added flavor, try mixing in diced tomatoes, onions, or bell peppers before pouring in the egg mixture.
- For a healthier option, substitute half of the cheese with cottage cheese for a creamy texture with fewer calories.
