Ingredients

  • 1/4 cup milk
  • 1/2 cup fresh spinach, chopped
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add the butter, allowing it to melt and coat the bottom of the pan.
  3. Add the chopped spinach to the skillet and sauté for about 1-2 minutes until wilted.
  4. Pour the egg mixture into the skillet over the spinach. Let it cook undisturbed for about 2-3 minutes, or until the edges begin to set.
  5. Gently lift the edges of the omelet with a spatula, allowing any uncooked egg to flow to the edges.
  6. Once the top is mostly set but still slightly runny, sprinkle the shredded cheese evenly over one half of the omelet.
  7. Carefully fold the other half of the omelet over the cheese and cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through.
  8. Slide the omelet onto a plate and serve immediately.
