Ingredients

  • 1/2 cup coconut flour
  • 1/4 cup psyllium husk powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 2 large eggs
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon erythritol (optional, for sweetness)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, salt, and erythritol (if using). Mix well.
  3. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Heat in the microwave for about 30 seconds, then stir until smooth and combined.
  4. Add the melted butter, eggs, and apple cider vinegar to the dry ingredients, followed by the cheese mixture. Mix until a dough forms.
  5. Place the dough on a piece of parchment paper and cover with another piece. Roll it out into a rectangle about 1/4 inch thick.
  6. Cut the dough into triangles (about 4 inches wide at the base). Starting from the base of each triangle, roll them up tightly to form croissants.
  7. Place the rolled croissants on the prepared baking sheet, ensuring they are spaced apart.
  8. Bake for 15-20 minutes or until golden brown. Allow to cool slightly before serving.
