- 1/4 cup unsalted butter, melted
- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese, softened
- 2 large eggs
- 1 tablespoon apple cider vinegar
- 1 tablespoon erythritol (optional, for sweetness)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, salt, and erythritol (if using). Mix well.
- In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Heat in the microwave for about 30 seconds, then stir until smooth and combined.
- Add the melted butter, eggs, and apple cider vinegar to the dry ingredients, followed by the cheese mixture. Mix until a dough forms.
- Place the dough on a piece of parchment paper and cover with another piece. Roll it out into a rectangle about 1/4 inch thick.
- Cut the dough into triangles (about 4 inches wide at the base). Starting from the base of each triangle, roll them up tightly to form croissants.
- Place the rolled croissants on the prepared baking sheet, ensuring they are spaced apart.
- Bake for 15-20 minutes or until golden brown. Allow to cool slightly before serving.
Notes
- For a cheesy twist, add 1/4 cup of grated Parmesan cheese to the dough.
- For a sweet version, brush the croissants with melted butter and sprinkle with cinnamon before baking.
