Description

Kare-Kare is a traditional Filipino oxtail stew known for its rich peanut sauce and vibrant vegetables.


Ingredients

  • 2 pounds oxtail, cut into pieces
  • 1/2 cup peanut butter
  • 1/4 cup rice flour
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1/2 teaspoon ground black pepper
  • 8 cups water
  • 1 large eggplant, sliced
  • 2 cups green beans, trimmed
  • 1 banana heart, sliced (optional)
  • 2 tablespoons fish sauce
  • Salt to taste
  • Chopped peanuts and sliced scallions for garnish

Instructions

  1. In a large pot, combine the oxtail, chopped onion, minced garlic, ground black pepper, and water. Bring to a boil, then reduce heat and simmer for about 2 to 3 hours, or until the oxtail is tender. Skim off any foam that rises to the surface.
  2. Once the oxtail is tender, remove it from the pot and set aside. Strain the broth and return it to the pot.
  3. In a small bowl, mix the rice flour with a little water to create a slurry. Stir this into the broth to thicken it.
  4. Add the peanut butter and fish sauce to the pot, stirring until well combined.
  5. Return the oxtail to the pot and add the sliced eggplant, green beans, and banana heart (if using). Simmer for an additional 10-15 minutes, or until the vegetables are tender.
  6. Taste and adjust seasoning with salt as needed.
  7. Serve hot, garnished with chopped peanuts and sliced scallions.

Notes

  • For a vegetarian version, substitute oxtail with tofu or seitan and use vegetable broth.
  • Add a splash of bagoong (fermented shrimp paste) for an authentic flavor boost.
