Festive Shrimp Skewers with Lemon Butter Drizzle delight all!


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, zested and juiced
  • 1/4 cup unsalted butter
  • 2 tablespoons fresh parsley, chopped
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. In a large bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the shrimp and toss until well coated.
  3. Thread the shrimp onto the skewers, about 4-5 shrimp per skewer.
  4. Preheat the grill or grill pan to medium-high heat. Grill the skewers for 2-3 minutes on each side, or until the shrimp are pink and opaque.
  5. While the shrimp are grilling, melt the butter in a small saucepan over low heat. Stir in the lemon juice and zest, and remove from heat.
  6. Once the shrimp are cooked, remove them from the grill and drizzle the lemon butter sauce over the skewers.
  7. Garnish with chopped parsley before serving.

Notes

  • For a spicy kick, add a teaspoon of cayenne pepper to the marinade or serve with a spicy dipping sauce.
  • Feel free to add vegetables like bell peppers or zucchini to the skewers for extra flavor and color. Just cut them into similar-sized pieces and grill them alongside the shrimp.
