Festive Shrimp Skewers with Lemon Butter Drizzle delight all!

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, zested and juiced
- 1/4 cup unsalted butter
- 2 tablespoons fresh parsley, chopped
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- In a large bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the shrimp and toss until well coated.
- Thread the shrimp onto the skewers, about 4-5 shrimp per skewer.
- Preheat the grill or grill pan to medium-high heat. Grill the skewers for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- While the shrimp are grilling, melt the butter in a small saucepan over low heat. Stir in the lemon juice and zest, and remove from heat.
- Once the shrimp are cooked, remove them from the grill and drizzle the lemon butter sauce over the skewers.
- Garnish with chopped parsley before serving.
Notes
- For a spicy kick, add a teaspoon of cayenne pepper to the marinade or serve with a spicy dipping sauce.
- Feel free to add vegetables like bell peppers or zucchini to the skewers for extra flavor and color. Just cut them into similar-sized pieces and grill them alongside the shrimp.
