Ingredients

  • 2 cups shelled fava beans (about 1 pound in the pod)
  • 1/4 cup fresh mint leaves, packed
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Bring a medium pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes until tender. Drain and rinse under cold water to stop the cooking process.
  2. If the fava beans have tough skins, pinch each bean to remove the outer skin. This step is optional but will yield a smoother puree.
  3. In a food processor, combine the fava beans, mint leaves, olive oil, lemon juice, garlic, salt, and pepper. Blend until smooth, scraping down the sides as needed.
  4. Taste and adjust seasoning, adding red pepper flakes if desired for a bit of heat.
  5. Transfer the puree to a serving bowl and drizzle with a little extra olive oil and a few mint leaves for garnish.

  • For a creamier texture, add a tablespoon of water or vegetable broth while blending.
