Description
A delightful and refreshing fava bean and mint puree that is perfect as a dip or spread.
Ingredients

- 2 cups shelled fava beans (about 1 pound in the pod)
- 1/4 cup fresh mint leaves, packed
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Bring a medium pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes until tender. Drain and rinse under cold water to stop the cooking process.
- If the fava beans have tough skins, pinch each bean to remove the outer skin. This step is optional but will yield a smoother puree.
- In a food processor, combine the fava beans, mint leaves, olive oil, lemon juice, garlic, salt, and pepper. Blend until smooth, scraping down the sides as needed.
- Taste and adjust seasoning, adding red pepper flakes if desired for a bit of heat.
- Transfer the puree to a serving bowl and drizzle with a little extra olive oil and a few mint leaves for garnish.
Notes
- For a creamier texture, add a tablespoon of water or vegetable broth while blending.
- Serve the puree as a dip with pita chips or fresh vegetables, or use it as a spread on sandwiches.
