Description

Everything Bagel Breakfast Bake is a delicious and hearty dish perfect for breakfast or brunch, featuring bagels, eggs, cheese, and a variety of vegetables.

Ingredients

Scale
  • 8 everything bagels, cut into cubes
  • 8 large eggs
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1 cup diced cooked ham (or cooked bacon)
  • 1/2 cup diced bell pepper (any color)
  • 1/2 cup diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh chives (optional)
  • 1 tablespoon everything bagel seasoning

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9×13-inch baking dish.
  3. In a large bowl, whisk together the eggs and milk until well combined.
  4. Add the garlic powder, onion powder, salt, and black pepper to the egg mixture, and stir to combine.
  5. Layer the bagel cubes evenly in the prepared baking dish.
  6. Sprinkle the diced ham, bell pepper, onion, and cheddar cheese over the bagel cubes.
  7. Pour the egg mixture evenly over the top, ensuring all bagel pieces are soaked.
  8. Sprinkle everything bagel seasoning and chives (if using) on top.
  9. Cover the dish with aluminum foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 15-20 minutes, or until the eggs are set and the top is golden brown.
  11. Let it cool for 5-10 minutes before slicing and serving.

Notes

  • For a spicier version, add diced jalapeños or a dash of hot sauce to the egg mixture.
  • To make it vegetarian, omit the ham and add more vegetables like spinach or mushrooms.
