Description

Ethiopian Doro Wat is a flavorful chicken stew that is a staple in Ethiopian cuisine, known for its rich spices and hearty ingredients.

Ingredients

Scale
  • 2 pounds chicken drumsticks or thighs, skinless
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup berbere spice mix
  • 1/4 cup vegetable oil
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • Salt and pepper to taste
  • 4 hard-boiled eggs, peeled
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. In a large bowl, marinate the chicken with lemon juice, salt, and pepper. Let it sit for at least 30 minutes to absorb the flavors.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they are golden brown, about 15-20 minutes. Stir frequently to prevent burning.
  3. Add the minced garlic and grated ginger to the pot, cooking for an additional 2-3 minutes until fragrant.
  4. Stir in the berbere spice mix and cook for another 2 minutes to release its flavors.
  5. Add the crushed tomatoes and chicken broth to the pot, stirring well to combine. Bring the mixture to a simmer.
  6. Add the marinated chicken to the pot, ensuring it is submerged in the sauce. Cover and cook on low heat for about 45 minutes, stirring occasionally.
  7. After 45 minutes, add the hard-boiled eggs to the pot and simmer for an additional 10 minutes to heat through.
  8. Taste and adjust seasoning with more salt and pepper if needed.
  9. Serve hot, garnished with fresh cilantro or parsley if desired. Enjoy with injera or rice.

Notes

  • For a spicier version, add more berbere spice or a chopped jalapeño during cooking.
  • Substitute chicken with beef or lentils for a different protein option, adjusting cooking times as necessary.
