Description

A refreshing and easy wedge salad that is low carb and keto-friendly, perfect for a light meal or side dish.


Ingredients

  • 1 head of iceberg lettuce, cut into 4 wedges
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled blue cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, sliced
  • 1/2 cup ranch dressing (low carb or homemade)
  • Salt and pepper to taste

Instructions

  1. Start by rinsing the iceberg lettuce under cold water. Pat dry with paper towels and cut it into 4 equal wedges.
  2. Place each wedge on a serving plate.
  3. Evenly distribute the halved cherry tomatoes over the wedges.
  4. Sprinkle the crumbled blue cheese on top of each wedge.
  5. Add the crumbled bacon and sliced green onions to the wedges.
  6. Drizzle ranch dressing over each wedge to taste.
  7. Season with salt and pepper as desired.
  8. Serve immediately, or chill in the refrigerator for about 10 minutes before serving for a refreshing touch.
