A quick and delicious easy light spinach omelet that’s perfect for a healthy meal.
Ingredients

- 2 large eggs
- 1 cup fresh spinach, chopped
- 2 tablespoons milk
- 1/4 cup shredded low-fat cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the chopped spinach to the skillet and sauté for about 1-2 minutes until wilted.
- Pour the egg mixture over the spinach in the skillet. Cook for about 3-4 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow to the edges.
- Once the eggs are mostly set, sprinkle the shredded cheese on one half of the omelet.
- Carefully fold the omelet in half over the cheese and cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.
- Slide the omelet onto a plate and serve immediately.
Notes
- Add diced tomatoes or bell peppers for extra flavor and nutrition.
- Substitute the spinach with other greens like kale or arugula for a different taste.
