Description

A quick and delicious easy light spinach omelet that’s perfect for a healthy meal.

Ingredients

Scale
  • 2 large eggs
  • 1 cup fresh spinach, chopped
  • 2 tablespoons milk
  • 1/4 cup shredded low-fat cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Add the chopped spinach to the skillet and sauté for about 1-2 minutes until wilted.
  4. Pour the egg mixture over the spinach in the skillet. Cook for about 3-4 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow to the edges.
  5. Once the eggs are mostly set, sprinkle the shredded cheese on one half of the omelet.
  6. Carefully fold the omelet in half over the cheese and cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.
  7. Slide the omelet onto a plate and serve immediately.

Notes

  • Add diced tomatoes or bell peppers for extra flavor and nutrition.
  • Substitute the spinach with other greens like kale or arugula for a different taste.
