Ingredients

  • ¼ cup granulated erythritol (or your preferred keto sweetener)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • ½ cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh strawberries, hulled and sliced

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, combine almond flour, granulated erythritol, baking powder, and salt. Stir in the melted butter until the mixture is crumbly. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
  3. In another bowl, beat the softened cream cheese and powdered erythritol together until smooth. Add vanilla extract and eggs, one at a time, mixing well after each addition. Pour the cream cheese mixture over the crust in the baking dish.
  4. Evenly distribute the sliced strawberries on top of the cream cheese layer. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  5. Remove from the oven and let cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set.
  6. Once chilled, lift the bars out of the baking dish using the parchment overhang. Cut into squares and serve.
