- 1 (14-ounce) bag mixed stir-fry vegetables (broccoli, bell peppers, snap peas)
- 1/4 cup tamari sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons chopped cilantro (for garnish)
- Chopped peanuts (for garnish, optional)
Instructions
- In a large frying pan, warm the peanut oil over medium-high heat.
- Add the ground chicken and cook until it’s thoroughly browned, using a spatula to crumble it, which should take about 5-7 minutes.
- Incorporate the chopped shallot and minced garlic into the pan. Sauté for 2-3 minutes until the shallot becomes soft and fragrant.
- Mix in the stir-fry vegetables, tamari sauce, apple cider vinegar, grated ginger, and crushed red pepper flakes.
- Continue to cook for another 5-7 minutes, stirring frequently, until the vegetables are tender yet crisp.
- Take the pan off the heat and sprinkle with chopped cilantro and peanuts if you like.
- Serve immediately for a hearty and flavorful meal!
