  • 1/4 cup tamari sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons chopped cilantro (for garnish)
  • Chopped peanuts (for garnish, optional)

Instructions

  1. In a large frying pan, warm the peanut oil over medium-high heat.
  2. Add the ground chicken and cook until it’s thoroughly browned, using a spatula to crumble it, which should take about 5-7 minutes.
  3. Incorporate the chopped shallot and minced garlic into the pan. Sauté for 2-3 minutes until the shallot becomes soft and fragrant.
  4. Mix in the stir-fry vegetables, tamari sauce, apple cider vinegar, grated ginger, and crushed red pepper flakes.
  5. Continue to cook for another 5-7 minutes, stirring frequently, until the vegetables are tender yet crisp.
  6. Take the pan off the heat and sprinkle with chopped cilantro and peanuts if you like.
