Description

Dragonfire Cauliflower & Beef Crunch is a delicious and spicy dish that combines ground beef with fresh vegetables and a flavorful sauce, topped with crispy fried onions.

Ingredients

Scale
  • 1 head cauliflower, cut into florets
  • 1 pound ground beef
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, diced
  • 1 cup shredded carrots
  • 1/4 cup soy sauce
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 cup green onions, sliced
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • 1 cup crispy fried onions (for topping)

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat. Add the diced onion and sauté for about 3 minutes until translucent.
  2. Add the minced garlic and ginger, cooking for an additional minute until fragrant.
  3. Stir in the ground beef, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  4. Add the cauliflower florets, red bell pepper, and shredded carrots to the skillet. Stir well to combine.
  5. In a small bowl, mix together the soy sauce, sriracha, rice vinegar, and sesame oil. Pour this sauce over the beef and vegetable mixture.
  6. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender but still has a slight crunch. Season with salt and pepper to taste.
  7. Remove from heat and stir in the sliced green onions and chopped cilantro.
  8. Serve hot, topped with crispy fried onions for an extra crunch.

Notes

  • For a vegetarian option, substitute the ground beef with crumbled tempeh or lentils.
  • Add more vegetables like snap peas or broccoli for extra nutrition and color. Adjust cooking time as needed to ensure all vegetables are tender.
