- 1 pound ground beef
- 1 tablespoon vegetable oil
- 1 medium onion, diced

- 1 red bell pepper, diced
- 1 cup shredded carrots
- 1/4 cup soy sauce
- 2 tablespoons sriracha (adjust to taste)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/4 cup green onions, sliced
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 1 cup crispy fried onions (for topping)
Instructions
- In a large skillet, heat the vegetable oil over medium-high heat. Add the diced onion and sauté for about 3 minutes until translucent.
- Add the minced garlic and ginger, cooking for an additional minute until fragrant.
- Stir in the ground beef, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
- Add the cauliflower florets, red bell pepper, and shredded carrots to the skillet. Stir well to combine.
- In a small bowl, mix together the soy sauce, sriracha, rice vinegar, and sesame oil. Pour this sauce over the beef and vegetable mixture.
- Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender but still has a slight crunch. Season with salt and pepper to taste.
- Remove from heat and stir in the sliced green onions and chopped cilantro.
- Serve hot, topped with crispy fried onions for an extra crunch.
Notes
- For a vegetarian option, substitute the ground beef with crumbled tempeh or lentils.
- Add more vegetables like snap peas or broccoli for extra nutrition and color. Adjust cooking time as needed to ensure all vegetables are tender.
