Description

Croatian Pašticada is a traditional dish made with marinated beef chuck roast, slow-cooked in a rich sauce of red wine, vegetables, and spices.


Ingredients

  • 2 pounds beef chuck roast
  • 1 cup red wine
  • 1/2 cup olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon red wine vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 bay leaves
  • 1 cup beef broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, marinate the beef chuck roast in red wine for at least 2 hours, or preferably overnight in the refrigerator.
  2. Remove the beef from the marinade and pat dry with paper towels. Reserve the marinade.
  3. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes per side. Remove the beef and set aside.
  4. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  5. Stir in the diced tomatoes, tomato paste, red wine vinegar, brown sugar, oregano, thyme, black pepper, salt, cinnamon, and bay leaves. Cook for another 2-3 minutes.
  6. Return the beef to the pot and pour in the reserved marinade and beef broth. Bring to a simmer, then cover and reduce heat to low. Cook for 2-3 hours, or until the beef is tender and easily shredded.
  7. Once cooked, remove the beef from the pot and let it rest for 10 minutes before slicing.
  8. Serve the sliced beef with the sauce poured over it, garnished with fresh parsley.

Notes

  • For a thicker sauce, remove the beef once cooked and simmer the sauce uncovered for an additional 10-15 minutes.
  • Serve with mashed potatoes or polenta for a heartier meal.
  • You can also add olives or capers for a briny flavor twist.
