Description
Croatian Pašticada is a traditional dish made with marinated beef chuck roast, slow-cooked in a rich sauce of red wine, vegetables, and spices.

- 2 pounds beef chuck roast
- 1 cup red wine
- 1/2 cup olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can (14.5 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon red wine vinegar
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 bay leaves
- 1 cup beef broth
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, marinate the beef chuck roast in red wine for at least 2 hours, or preferably overnight in the refrigerator.
- Remove the beef from the marinade and pat dry with paper towels. Reserve the marinade.
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes per side. Remove the beef and set aside.
- In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the diced tomatoes, tomato paste, red wine vinegar, brown sugar, oregano, thyme, black pepper, salt, cinnamon, and bay leaves. Cook for another 2-3 minutes.
- Return the beef to the pot and pour in the reserved marinade and beef broth. Bring to a simmer, then cover and reduce heat to low. Cook for 2-3 hours, or until the beef is tender and easily shredded.
- Once cooked, remove the beef from the pot and let it rest for 10 minutes before slicing.
- Serve the sliced beef with the sauce poured over it, garnished with fresh parsley.
Notes
- For a thicker sauce, remove the beef once cooked and simmer the sauce uncovered for an additional 10-15 minutes.
- Serve with mashed potatoes or polenta for a heartier meal.
- You can also add olives or capers for a briny flavor twist.
