Description

Crispy Lettuce Shell Keto Tacos are a delicious low-carb alternative to traditional tacos, featuring a flavorful meat filling wrapped in fresh lettuce leaves.

Ingredients

Scale
  • 1 lb ground beef or ground chicken
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 large romaine or iceberg lettuce leaves
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the ground beef or chicken to the skillet. Cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat if necessary.
  4. Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well and let it cook for another 2-3 minutes to allow the flavors to meld.
  5. While the meat is cooking, prepare the lettuce leaves by rinsing them under cold water and patting them dry.
  6. To assemble the tacos, place a generous scoop of the meat mixture into each lettuce leaf. Top with shredded cheese, diced tomatoes, avocado slices, and a dollop of sour cream.
  7. Garnish with fresh cilantro and serve immediately.

Notes

  • For added flavor, consider adding sliced jalapeños or a squeeze of lime juice on top.
  • You can also substitute the ground meat with shredded rotisserie chicken for a quicker option.
