- 1 cup fresh spinach, finely chopped
- 1/2 cup softened cream cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese

- 1 teaspoon onion powder
- 1 teaspoon dried Italian herbs
- Salt and freshly ground black pepper to taste
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
Instructions
- Begin by heating your oven to 375°F (190°C).
- In a mixing bowl, blend together the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, onion powder, Italian herbs, salt, and pepper until the mixture is smooth and creamy.
- Take each chicken breast and, using a sharp knife, carefully cut a pocket into the side, ensuring you don’t slice all the way through.
- Generously fill each pocket with the spinach and cheese mixture, securing the opening with toothpicks if necessary.
- In a large, oven-safe skillet, warm the olive oil over medium-high heat. Add the stuffed chicken breasts and cook for about 4-5 minutes on each side until they are beautifully browned.
- Squeeze the lemon juice over the chicken, then place the skillet in the oven. Bake for 20-25 minutes, or until the chicken is thoroughly cooked and reaches an internal temperature of 165°F (75°C).
- Once done, take the skillet out of the oven and allow the chicken to rest for 5 minutes before slicing and serving.
