  • 1/2 cup shredded mozzarella cheese

  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice

Instructions

  1. Begin by heating your oven to 375°F (190°C).
  2. In a mixing bowl, blend together the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, onion powder, Italian herbs, salt, and pepper until the mixture is smooth and creamy.
  3. Take each chicken breast and, using a sharp knife, carefully cut a pocket into the side, ensuring you don’t slice all the way through.
  4. Generously fill each pocket with the spinach and cheese mixture, securing the opening with toothpicks if necessary.
  5. In a large, oven-safe skillet, warm the olive oil over medium-high heat. Add the stuffed chicken breasts and cook for about 4-5 minutes on each side until they are beautifully browned.
  6. Squeeze the lemon juice over the chicken, then place the skillet in the oven. Bake for 20-25 minutes, or until the chicken is thoroughly cooked and reaches an internal temperature of 165°F (75°C).
