Description

Creamy Spinach & Artichoke Stuffed Mushrooms are a delicious appetizer filled with a rich and creamy mixture of spinach, artichokes, and cheeses, baked to perfection.


Ingredients

  • 16 large white or cremini mushrooms, stems removed
  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1/4 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add chopped spinach and artichoke hearts to the skillet. Cook for 2-3 minutes until the spinach is wilted. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine softened cream cheese, Parmesan cheese, mozzarella cheese, lemon juice, salt, black pepper, and red pepper flakes (if using). Mix until smooth.
  5. Fold the sautéed spinach and artichoke mixture into the cheese mixture until well combined.
  6. Stuff each mushroom cap with the creamy mixture, pressing down gently to fill them completely.
  7. Place the stuffed mushrooms on a baking sheet. If desired, sprinkle breadcrumbs on top of each mushroom for added crunch.
  8. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
  9. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For a lighter version, substitute Greek yogurt for half of the cream cheese.
  • Try adding cooked bacon bits or diced red bell pepper to the filling for extra flavor and texture.
