Creamy Spinach & Artichoke Stuffed Mushrooms are a delicious appetizer filled with a rich and creamy mixture of spinach, artichokes, and cheeses, baked to perfection.

- 16 large white or cremini mushrooms, stems removed
- 1 cup fresh spinach, chopped
- 1 cup canned artichoke hearts, drained and chopped
- 1 cup cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
- 1/4 cup breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 375°F.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add chopped spinach and artichoke hearts to the skillet. Cook for 2-3 minutes until the spinach is wilted. Remove from heat and let cool slightly.
- In a mixing bowl, combine softened cream cheese, Parmesan cheese, mozzarella cheese, lemon juice, salt, black pepper, and red pepper flakes (if using). Mix until smooth.
- Fold the sautéed spinach and artichoke mixture into the cheese mixture until well combined.
- Stuff each mushroom cap with the creamy mixture, pressing down gently to fill them completely.
- Place the stuffed mushrooms on a baking sheet. If desired, sprinkle breadcrumbs on top of each mushroom for added crunch.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a lighter version, substitute Greek yogurt for half of the cream cheese.
- Try adding cooked bacon bits or diced red bell pepper to the filling for extra flavor and texture.
