Ingredients

  • 2 boneless pork chops (approximately 1 inch thick, 68 ounces each)
  • 1 tablespoon Cajun spice blend
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 cup heavy whipping cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • 2 medium zucchinis, cut into thin noodles or ribbons
  • 1 tablespoon fresh parsley, finely chopped (for garnish)

Instructions

  1. Begin by generously coating both sides of the pork chops with the Cajun spice blend, along with a sprinkle of salt and pepper.
  2. Heat a large skillet over medium-high heat and add the olive oil and butter. Once the butter has melted and is bubbling, carefully place the pork chops in the skillet. Sear them for about 4-5 minutes on each side until they develop a rich golden crust and are cooked through. Once done, transfer the pork chops to a plate and cover them to keep warm.
  3. In the same skillet, reduce the heat to medium and pour in the heavy whipping cream. Sprinkle in the garlic powder and onion powder, stirring continuously to blend the flavors while scraping any flavorful bits stuck to the bottom of the pan.
  4. Allow the creamy mixture to simmer gently for about 3-4 minutes, stirring occasionally, until it thickens to your desired consistency.
  5. Add the zucchini noodles to the skillet and sauté for an additional 2-3 minutes, just until they soften slightly but still retain some crunch.
  6. Place the seared pork chops back into the skillet, allowing the creamy sauce and zucchini to envelop them. Heat everything together for another minute, ensuring the pork is warmed through.
  7. Finish by garnishing with freshly chopped parsley before serving.
