A delicious Cowboy Butter Steak served with roasted asparagus, perfect for a hearty meal.

- 2 ribeye steaks (approximately 1 inch thick, 12 ounces each)
- 1 tablespoon avocado oil
- Salt and freshly ground black pepper to taste
- 1/2 cup unsalted butter, softened
- 2 cloves garlic, finely chopped
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon fresh green onions, sliced
- 1 teaspoon soy sauce
- 1 teaspoon fresh lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon red pepper flakes (optional)
- 1 pound fresh asparagus, ends trimmed
- 2 tablespoons avocado oil
- Salt and freshly ground black pepper to taste
- 1 teaspoon onion powder
Instructions
- Preheat your oven to 400°F.
- In a mixing bowl, combine the softened butter with garlic, cilantro, green onions, soy sauce, lime juice, chili powder, and red pepper flakes. Blend until smooth and set aside.
- Season both sides of the ribeye steaks with salt and pepper.
- In a large skillet, heat avocado oil over medium-high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare.
- Remove the steaks from the skillet and let them rest for 5 minutes.
- On a baking sheet, drizzle the asparagus with avocado oil, sprinkle with salt, pepper, and onion powder. Toss to coat and arrange in a single layer.
- Roast the asparagus in the oven for 12-15 minutes until tender and slightly crisped.
- Serve each steak topped with saddle up butter and accompanied by garlic-infused asparagus.
Notes
- Feel free to experiment with different spices in the saddle up butter, such as oregano or basil.
- You can swap ribeye for filet mignon or a leaner sirloin.
- Pair with quinoa or a vibrant garden salad for a complete meal.
