Description

Ingredients

  • 2 ribeye steaks (approximately 1 inch thick, 12 ounces each)
  • 1 tablespoon avocado oil
  • Salt and freshly ground black pepper to taste
  • 1/2 cup unsalted butter, softened
  • 2 cloves garlic, finely chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon fresh green onions, sliced
  • 1 teaspoon soy sauce
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 pound fresh asparagus, ends trimmed
  • 2 tablespoons avocado oil
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 400°F.
  2. In a mixing bowl, combine the softened butter with garlic, cilantro, green onions, soy sauce, lime juice, chili powder, and red pepper flakes. Blend until smooth and set aside.
  3. Season both sides of the ribeye steaks with salt and pepper.
  4. In a large skillet, heat avocado oil over medium-high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare.
  5. Remove the steaks from the skillet and let them rest for 5 minutes.
  6. On a baking sheet, drizzle the asparagus with avocado oil, sprinkle with salt, pepper, and onion powder. Toss to coat and arrange in a single layer.
  7. Roast the asparagus in the oven for 12-15 minutes until tender and slightly crisped.
  8. Serve each steak topped with saddle up butter and accompanied by garlic-infused asparagus.
