Instructions
- In a medium saucepan, bring water or vegetable broth to a boil. Add olive oil, salt, and black pepper.
- Once boiling, remove from heat and stir in the couscous. Cover the saucepan and let it sit for 5 minutes to allow the couscous to absorb the liquid.
- Fluff the couscous with a fork and let it cool slightly.
- In a large bowl, combine the cooled couscous, cherry tomatoes, cucumber, red onion, parsley, and feta cheese (if using).
- Drizzle the lemon juice over the salad and toss gently to combine all ingredients.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
