Ingredients

  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup cottage cheese (full-fat)
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.
  2. In a large mixing bowl, combine the grated zucchini and cottage cheese. Mix well until combined.
  3. Add the eggs to the zucchini mixture and whisk until smooth.
  4. In a separate bowl, mix together the almond flour, baking powder, garlic powder, onion powder, salt, black pepper, paprika, oregano, and basil.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the shredded cheddar cheese and grated Parmesan cheese, followed by the olive oil.
  7. Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  8. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
