Description
Deliciously crispy Corn & Zucchini Fritters that are perfect as a snack or appetizer.

- 2 cups fresh corn kernels (about 3 ears of corn)
- 1 medium zucchini, grated
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 2 large eggs
- 1/4 cup green onions, chopped
- 1/2 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Vegetable oil for frying
Instructions
- In a large bowl, combine the corn kernels and grated zucchini. Squeeze out excess moisture from the zucchini using a clean kitchen towel or paper towels.
- Add the flour, cornmeal, eggs, green onions, baking powder, garlic powder, salt, pepper, and Parmesan cheese (if using) to the bowl. Mix until just combined.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the fritter mixture into the skillet, flattening them slightly with the back of the spoon.
- Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Avoid overcrowding the skillet; cook in batches if necessary.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil. Repeat with the remaining mixture.
- Serve warm with your favorite dipping sauce or a dollop of sour cream.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper or chopped jalapeños to the batter.
- Substitute the zucchini with grated carrots or yellow squash for a different flavor and texture.
