Description

Deliciously crispy Corn & Zucchini Fritters that are perfect as a snack or appetizer.


Ingredients

  • 2 cups fresh corn kernels (about 3 ears of corn)
  • 1 medium zucchini, grated
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the corn kernels and grated zucchini. Squeeze out excess moisture from the zucchini using a clean kitchen towel or paper towels.
  2. Add the flour, cornmeal, eggs, green onions, baking powder, garlic powder, salt, pepper, and Parmesan cheese (if using) to the bowl. Mix until just combined.
  3. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the fritter mixture into the skillet, flattening them slightly with the back of the spoon.
  4. Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Avoid overcrowding the skillet; cook in batches if necessary.
  5. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil. Repeat with the remaining mixture.
  6. Serve warm with your favorite dipping sauce or a dollop of sour cream.

Notes

  • For a spicier kick, add 1/4 teaspoon of cayenne pepper or chopped jalapeños to the batter.
  • Substitute the zucchini with grated carrots or yellow squash for a different flavor and texture.
