  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat your grill or oven to 400°F (200°C). If using an oven, line a baking sheet with parchment paper.
  2. Cut each ear of corn into quarters lengthwise to create the ‘ribs.’
  3. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
  4. Brush the corn ribs with the oil mixture, ensuring they are well coated.
  5. Place the corn ribs on the grill or in the oven. Grill for about 15-20 minutes, turning occasionally, until they are tender and slightly charred. If using the oven, roast for 20-25 minutes, flipping halfway through.
  6. Once cooked, remove the corn ribs from the grill or oven and let them cool slightly.
