Instructions
- Preheat your grill or oven to 400°F (200°C). If using an oven, line a baking sheet with parchment paper.
- Cut each ear of corn into quarters lengthwise to create the ‘ribs.’
- In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
- Brush the corn ribs with the oil mixture, ensuring they are well coated.
- Place the corn ribs on the grill or in the oven. Grill for about 15-20 minutes, turning occasionally, until they are tender and slightly charred. If using the oven, roast for 20-25 minutes, flipping halfway through.
- Once cooked, remove the corn ribs from the grill or oven and let them cool slightly.
- Garnish with chopped cilantro and serve with lime wedges on the side for squeezing over the top.
