- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup cooked and crumbled bacon or diced vegetables (like spinach or bell peppers)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 325°F.
- Grease a muffin tin with cooking spray or oil.
- In a large mixing bowl, whisk together the eggs, cottage cheese, salt, pepper, garlic powder, and onion powder until well combined.
- Stir in the shredded cheese and your choice of bacon or vegetables. Mix until evenly distributed.
- Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 25-30 minutes, or until the egg bites are set and lightly golden on top.
- Allow the egg bites to cool for a few minutes before carefully removing them from the muffin tin.
- Serve warm or store in an airtight container in the refrigerator for up to 5 days.
