  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter and 1/2 cup of powdered sugar together until the mixture is airy and pale.
  3. Stir in the vanilla and almond extracts until well blended.
  4. Gradually incorporate the flour and salt, mixing gently until just combined.
  5. Carefully fold in the shredded coconut, ensuring it is evenly mixed throughout the dough.
  6. Shape the mixture into small balls, approximately 1 inch in size, and arrange them on the prepared baking sheet, leaving enough space between each one.
  7. Bake for 12-15 minutes, or until the bottoms turn a light golden brown.
  8. Once baked, allow the cookies to cool on the sheet for about 5 minutes before moving them to a wire rack to cool completely.
  9. Finally, sprinkle the cookies with the remaining powdered sugar for a sweet finish.
