- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and 1/2 cup of powdered sugar together until the mixture is airy and pale.
- Stir in the vanilla and almond extracts until well blended.
- Gradually incorporate the flour and salt, mixing gently until just combined.
- Carefully fold in the shredded coconut, ensuring it is evenly mixed throughout the dough.
- Shape the mixture into small balls, approximately 1 inch in size, and arrange them on the prepared baking sheet, leaving enough space between each one.
- Bake for 12-15 minutes, or until the bottoms turn a light golden brown.
- Once baked, allow the cookies to cool on the sheet for about 5 minutes before moving them to a wire rack to cool completely.
- Finally, sprinkle the cookies with the remaining powdered sugar for a sweet finish.
Notes
- For a delightful twist, coat the cooled cookies in melted dark chocolate and let them set on parchment paper.
- To amplify the coconut flavor, substitute coconut extract for the almond extract.
