A creamy and delightful dessert that combines the tropical flavors of coconut with the earthy notes of matcha green tea.

- 1 cup coconut milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 teaspoons matcha green tea powder
- 2 teaspoons unflavored gelatin
- 1/4 cup cold water
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
- In a medium saucepan, combine the coconut milk, heavy cream, sugar, matcha powder, and a pinch of salt. Heat over medium heat, stirring until the sugar and matcha are fully dissolved, but do not let it boil.
- Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved. Add the vanilla extract and mix well.
- Pour the mixture into individual serving cups or ramekins. Allow to cool at room temperature for about 30 minutes.
- Once cooled, cover each cup with plastic wrap and refrigerate for at least 4 hours, or until set.
- To serve, gently run a knife around the edges of the panna cotta and invert onto a plate, or serve directly in the cups.
Notes
- For a tropical twist, add shredded coconut on top before serving.
- Substitute almond milk for coconut milk for a different flavor profile.
