Coconut Lime Protein Bites are a delicious and energizing snack packed with protein and flavor, perfect for any time of the day.


Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup vanilla protein powder
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup lime juice (freshly squeezed)
  • 1 teaspoon lime zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, shredded coconut, and vanilla protein powder. Mix well until evenly combined.
  2. In a separate bowl, whisk together the almond butter, honey (or maple syrup), lime juice, lime zest, vanilla extract, and salt until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until everything is well combined. The mixture should be sticky but manageable.
  4. Using your hands, form the mixture into small balls, about 1 inch in diameter. Place the protein bites on a parchment-lined baking sheet.
  5. Once all the mixture is shaped into bites, refrigerate for at least 30 minutes to firm up.
  6. Store the protein bites in an airtight container in the refrigerator for up to one week.

Notes

  • For a chocolate twist, add 2 tablespoons of cocoa powder to the dry ingredients.
  • Substitute peanut butter for almond butter for a different flavor profile.
