Ingredients

- 1 cup rolled oats
- 1 cup unsweetened shredded coconut
- 1/2 cup vanilla protein powder
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup lime juice (freshly squeezed)
- 1 teaspoon lime zest
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the rolled oats, shredded coconut, and vanilla protein powder. Mix well until evenly combined.
- In a separate bowl, whisk together the almond butter, honey (or maple syrup), lime juice, lime zest, vanilla extract, and salt until smooth.
- Pour the wet mixture into the dry ingredients and stir until everything is well combined. The mixture should be sticky but manageable.
- Using your hands, form the mixture into small balls, about 1 inch in diameter. Place the protein bites on a parchment-lined baking sheet.
- Once all the mixture is shaped into bites, refrigerate for at least 30 minutes to firm up.
- Store the protein bites in an airtight container in the refrigerator for up to one week.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the dry ingredients.
- Substitute peanut butter for almond butter for a different flavor profile.
