Description

Coconut-Lime Keto Moqueca is a flavorful and healthy dish that combines firm white fish with a creamy coconut milk base, enhanced by fresh lime and spices.

Ingredients

Scale
  • 1 pound firm white fish (like cod or halibut), cut into bite-sized pieces
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 2 limes
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced red and green bell peppers to the skillet and cook for 3-4 minutes until they begin to soften.
  5. Sprinkle in the cumin, paprika, turmeric, salt, and black pepper. Stir well to combine and cook for another minute to toast the spices.
  6. Pour in the coconut milk and bring the mixture to a gentle simmer.
  7. Add the fish pieces to the skillet, ensuring they are submerged in the coconut milk.
  8. Cover and simmer for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  9. Remove from heat and stir in the lime juice and chopped cilantro.
  10. Serve hot, garnished with additional cilantro if desired.

Notes

  • For a creamier texture, let the moqueca simmer a little longer before adding the fish.
  • You can substitute shrimp or scallops for the fish for a different flavor profile.
  • For a spicier kick, add sliced jalapeños or a dash of cayenne pepper to the skillet with the spices.
