- 2 cups almond flour
- 1/2 cup pecans, chopped
- 1/4 cup erythritol or your preferred keto sweetener
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 4 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with cooking spray or line it with parchment paper.
- In a large mixing bowl, combine the almond flour, chopped pecans, erythritol, baking powder, ground cinnamon, and salt. Mix well until all dry ingredients are evenly distributed.
- In a separate bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until fully combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

- For added flavor, consider folding in 1/2 cup of sugar-free chocolate chips or dried unsweetened cranberries before baking.
- If you prefer a sweeter bread, increase the erythritol to 1/3 cup or add a sprinkle of cinnamon sugar on top before baking.
