Ingredients

  • 1 cup almond flour
  • 2 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon coconut oil (for cooking)
  • 1 medium apple, peeled and thinly sliced
  • 1 tablespoon butter
  • 1 tablespoon erythritol (or preferred sweetener)
  • 1/2 teaspoon lemon juice

Instructions

  1. In a mixing bowl, whisk together the almond flour, eggs, almond milk, vanilla extract, cinnamon, and salt until smooth.
  2. Let the batter rest for about 10 minutes to thicken slightly.
  3. In a non-stick skillet, heat 1/2 tablespoon of coconut oil over medium heat.
  4. Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom evenly.
  5. Cook for 2-3 minutes until the edges start to lift and the bottom is lightly golden.
  6. Carefully flip and cook for another 1-2 minutes.
  7. Remove and keep warm. Repeat with remaining batter, adding more coconut oil as needed.
  8. In another skillet, melt the butter over medium heat.
  9. Add the sliced apples, erythritol, and lemon juice.
  10. Cook for about 5-7 minutes until the apples are tender and caramelized.
  11. To serve, place a few spoonfuls of the cinnamon apples onto each crepe, fold or roll them up, and enjoy warm.

Notes

  • For a chocolate twist, add 1 tablespoon of unsweetened cocoa powder to the batter.
